Cashew Milk

Kevin shared this delicious recipe. We are lucky to have raw cashews at our local Trader Joe's. If you can find them near you, this is much more tasty than soy milk or almond milk. Great in smoothies and Apple Oatmeal Bake

1 cup raw cashews, unsalted

3–5 cups water

1/2 tsp vanilla

1/4 tsp salt

3–5 dates (or other sweetener to taste)

Soak the cashews in some water for 4–6 hours. Place the cashews in a blender with remaining ingredients. Blend until smooth. Amount of water depends on how rich and creamy you want the milk. 5 cups is similar to regular milk, 3 cups will be a rich creamy egg nog-style beverage (delicious!).
