A good reason to grow mint (in a pot!) for this summer refresher!

1 ½ ounce light rum

about 12 mint leaves

juice from ½ lime

2 TB simple syrup (combine equal parts sugar and water, heat to dissolve sugar)

club soda or seltzer

Add mint leaves, simple syrup and lime juice to a rocks glass. Mash the leaves to extract their flavor, add ice then rum. Stir and top with some club soda.
