Cranberry Nut Bread

2 cups flour

1 cup sugar

1 ½ tsp baking powder

1 tsp salt

¾ cup orange juice

1 TB grated orange peel

2 TB shortening (or butter, or oil)

1 egg, beaten

1 ½ cups fresh cranberries, coarsely chopped

½ cup chopped nuts

Mix together the flour, sugar, baking powder, and salt in a mixing bowl. Stir in orange juice, orange peel, shortening and egg. Mix until well blended. Stir in cranberries and nuts and pour in to greased and floured loaf pan. Bake at 350˚ for 55 minutes, or until toothpick comes out clean. Cool on rack for 15 minutes then remove from pan. Cool completely the wrap and store overnight.
