Puerco Pibil (Slow Roasted Pork)

From the movie Once Upon a Time in Mexico - a dish so delicious the chef had to die.

5 TB annatto (achiote)

2 tsp whole cumin seeds

½ tsp whole cloves

1 TB peppercorns

8 whole allspice

2 habanero chilies

½ cup orange juice

½ cup vinegar

2 TB salt

8 cloves garlic

juice of 5 limes

splash of tequila

2 lbs pork shoulder, cut in 2 inch cubes

Grind whole spices in a spice grinder or coffee grinder. Put spice mixture in food processor with remaining ingredients, except pork, and blend until smooth. Put pork in a ziploc bag and pour in marinade. Marinate 6 hours, or overnight. Line a baking pan with banana leaves (or not) and pour in meat and marinade. Seal up the pan tightly and bake in a 300˚ oven for 4 hours. Serve with rice and garnish with orange wedges, sliced onions, avocado slices, and cilantro.
