Mom's Sausage Stuffing

I'm guessing at quantities here. Use your own judgement. Set aside some of the stuffing to top the wild rice casserole!

1 lb. pork sausage

1 or 2 large loaves white bread, shredded

2–3 stalks celery, chopped

1 large onion, chopped

1 stick butter

poultry seasoning

Brown the sausage, remove from pan and drain grease. Melt butter in the same pan and saute celery and onions until tender. Mix sausage, vegetables and poultry seasoning with shredded bread. Toss well and season to taste with salt and pepper.

Substitute stuffing cubes if you don't like shredding. Add a little turkey or chicken broth to moisten, as needed.
