Carrot Soup

Perfect for those picky eaters- they know who they are!

1 onion, chopped

1 lb carrots, peeled, chopped

3 TB butter

4 cup vegetable or chicken stock

1-2 tsp ginger

Salt, pepper

Sauté onion until soft, add carrots, stock. Bring to boil, simmer until tender. Puree with your handy immersion blender. Add seasonings.
