Spicy Bulghur and Lentil Salad

1/2 cup bulghur

1/2 cup lentils

1/4 cup olive oil

1 small onion, minced

1/2 cup parsley, minced

5 green onions, sliced

3 TB lemon juice

2 tsp cumin

1 clove garlic, minced

crushed red pepper to taste

1/2 tsp salt

Place bulghur in a large bowl and pour in about 3 cups of hot water. Cover and let sit for about an hour. Rinse lentils and place in a saucepan with enough water to cover by 2 inches. Bring to a boil, reduce heat and simmer about 15 minutes until lentils are tender. Drain lentils and let cool. Meanwhile, saute the minced onion in the olive oil until tender and golden. Add to lentils with remaining ingredients. Drain bulghur when it is tender and add to salad. Mix well and season with additional salt or lemon juice if needed. Serve at room temperature, or chilled.
